This zesty Smashed Blueberry BBQ sauce can be added to chicken, pork, ribs, salmon – you name it, it’ll be delicious!
The spicy kick of the cayenne and Worcestershire are complemented by the fresh fruit aromas and balanced maltiness of this hybrid Scotch-Porter Ale.
yields 3 cups
|2 ½ cups ketchup
½ cup brown sugar
½ medium yellow onion, minced (½ cup)
2 tablespoons olive oil
3 tablespoons water
1 cup Smashed Blueberry beer (room temp)
|4 cloves garlic, minced
1 ½ tbsp apple cider vinegar
1 ½ tbsp tomato paste
1 Worcestershire sauce
1 tsp dry mustard
½ tsp cayenne
Salt & fresh ground pepper to taste
In a large saucepan over medium-low heat, add the olive oil, minced onion, and garlic.
Cook until onions are soft and beginning to caramelize. Salt and pepper to taste.
Add ketchup, brown sugar, vinegar, tomato paste, Worcestershire, dry mustard, and cayenne. Stir until combined.
Bring to a low simmer. Slowly mix in the Smashed Blueberry and continue to simmer for 15-20 minutes.
